Baby Spinach (Nov-Apr) is an excellent source of vitamin K. Vitamin K supports bone health. Baby leaves have a slightly bolder taste than larger, mature spinach.

Curly kale Cabbage (Dec-Mar) has ruffled leaves and a fibrous stalk and is usually deep green in color. It has a lively pungent flavor with delicious bitter peppery qualities.

Celery leaves (Nov-May). It is rich in vitamin C and A. It is a biennial European plant in the parsley family. Celery leaves are less succulent, but full of flavour.

Endive (Oct-Apr). The outside leaves of an endive head are green and bitter. The inner leaves of the endive head are light green to creamy-white and milder flavored.

Potatoe, Doré vr. (Feb-Jun). Potatoes are a good source of vitamin C, vitamin B6, copper, potassium, manganese, and dietary fiber. In the Doré variety has rough skin and yellow flesh. It's primary use: Fresh markets.

Pointed Cabbage (Jan-May) is a type of green cabbage with green leaves and a pointed head. The leaves are more open than those of a green cabbage and they have a softer texture and sweeter taste.
